Joni's Enchilada Bake

I was nearly positive I had put a copy of this recipe on my blog before, but upon looking, I could not findeth! So, here it is. I use this recipe all the time  for potlucks or bringing a meal to a family because it is so easy to make and contains the entire meal in one dish.
 
Ingredients:
1 lb. lean ground beef
2 cups salsa
1 large onion- chopped
1 can (15 oz) black beans--drained and rinsed
1/4 c. Italian dressing
2 T. taco seasoning mix
6 8" flour tortillas......I just layered the bottom with whatever was in the package
1 pkg. shredded four cheese
1 C. sour cream

 Line 9 x 13" baking dish with foil.  Brown meat and onions, drain.  Add salsa, beans, dressing, and taco seasoning.  Mix well.  Arrange 3 tortillas in a single layer of pan.  Cover with layers of half each of the meat mixture, sour cream, and cheese.  Repeat all layers and cover with foil.  Preheat oven to 400 degrees and bake covered for 30 min.  Remove foil and bake additional 10 min. or until cheese is melted.  Let stand 5 min. before serving.  Top with chopped tomatoes,  (I used salsa here) shredded lettuce and chopped cilantro.   Makes 8 servings.

No requirement to put the foil on. It is simply to keep the pan from getting to messy.
